I just love cooking in the crockpot. Well, I guess I’m not really doing the cooking, now am I?! That is the best part about crockpots and why you should definitely incorporate this recipe into your hectic life.
So very basic, so very delish!
Trim the fat off of 3 chicken breasts chicken breasts and cut each breast into 2-3 smaller pieces.
Wash the peppers and cut in the fashion you see below:
Deseed the jalepenos and be careful not to touch them with your fingers!
…and please do not rub your eyes after…u will be in for an upleasant surprise!
Put veggies, chicken, and the remaining ingredients (except black beans and chips) into a large crock pot. Cook on low for 7-10 hrs or high for 4-5 hrs.
Mix well before cooking
About 15 minutes before you turn crock pot off, shred the chicken with your spoon or fork. Add the cream cheese and black beans to mixture. Stir well and let simmer for 15 minutes.
Eating these chips is ok if you consume with your protein (chicken), because it lowers the GI of the chips.
Serve alone, over quinoa, in a low carb tortilla, or scoop with baked tostitos:)
