Cut potatoes vertically into long thin strips. The thinner they are cut, the faster they will cook and the crunchier they will be. Put potatoes in a large bowl and add all main ingredients (except pam spray) to the bowl. Mix well with your hands so all strips are fully coated. The next 2 pictures are from cinnamon stevia fries...but you get the idea!
Spray a large cookie sheet with pam and spread all potatoes out evenly on the sheet. Try to keep a little bit of space between each strip. Feel free to use more than one sheet.
Bake for 45 minutes and make sure to flip (with tongs) about half way through. Keep an eye on them and cook to your desired "texture."
Take out of the oven and let cool for 5 minutes before eating.
