Gluten-Free Zucchini Crust Pizza

My parents grew any over-abundance of zucchini this summer, so I had to get creative in using up the huge bag full they sent home with me. I have friends that are gluten-free and I know more and more people are taking the gluten-free path, so I thought, why not make a yummy pizza option for them?! I made this gluten-free zucchini crust pizza 3 times before I got it just right! I am telling you all…you are missing out if you do not give this one a try! Preheat oven to 400 degrees. Gather all ingredients, a baking sheet, parchment paper, grater, large bowl, spoon, small towel, and measuring cups. Rinse the zucchini and cut off both ends. Grate 3 medium zucchinis into a bowl to make 3 cups of grated zucchini. Put the grated zucchini in a small towel and squeeze as much liquid out as possible. I typically squeeze over the sink, but used a bowl here to show you just how much water comes out! You will be left with about 2 cups of packed grated zucchini when you are done. Put all “Zucchini Crust” Ingredients into a bowl and mix well with a spoon. Place a large piece of parchment paper on a baking sheet and pour the “Zucchini Crust” dough onto the parchment paper. Use a spoon to spread out the dough into a large oval shape. You should take up about 3/4 of the sheet. Make sure the dough is a smooth and even as possible. I hosted a party this past weekend and decided to try a few new recipes. I have made mini pizza bites in the past for my guests, but I decided to make a gluten free option this time. Quinoa pizza bites came to mind, because it is not only gluten free quinoa recipe, but it is delicious! I decided to make 3 different types of quinoa pizza bites, and I had excellent reviews for all 3! The base of the recipe is the same, and you can feel free to jazz up your bites with any toppings you would like. Gluten Free Quinoa Recipes   Preheat oven to 350 degrees and grease a mini muffin pan with a decent amount of cooking spray. If you do not own a mini muffin pan, CLICK HERE! Gather all ingredients. Dice up the pizza toppings into small pieces and set aside. If you are using ingredients such as banana peppers, make sure to pat them dry before using them, otherwise they will make the pizza bites soggy. In a large bowl, mix all other ingredients together, making sure that you mix very well. Add the toppings to the bowl and mix well. My boyfriend is OBSESSED with pizza! I love it as well, although I rarely eat it because it is obviously not the healthiest food. He likes to eat pizza as his cheat meal, so I thought I would try to figure out a way he could enjoy his pizza without having to use up his cheat meal. Flatouts are a staple in my refrigerator, and they are lower in carbs and higher in protein and fiber….so why not use them for pizza?!?!  Making this pizza is quick and takes NO SKILL in the kitchen! Make your own personal pizza, and let your significant other and/or children create their own as well! Preheat oven to 375 degrees. Get out a cookie sheet and spray with pam or line with foil. Take out one flatout and spread about 2 1/2 tbsp of pizza sauce over the top, making sure you cover the entire flatout. Sprinkle low fat cheese over the sauce, making sure to cover most of the flatout. Add your favorite toppings over the cheese (such as banana peppers, turkey bacon, turkey pepperoni, peppers, spinach, mushrooms, onions, etc) and place on the cookie sheet. Place in the oven for 15 minutes and check to make sure the crust is crispy (but not burnt) all throughout the pizza. If the center is still slightly soft, cook for a few additional minutes until it is up to your desired crispiness. Remove from the oven and cut into small pieces.
