Everyone loves popsicles this time of year!!! The only problem with the majority of store bought popsicles, is the fact that they are packed with sugar and carbohydrates, therefore extremely high on the glycemic index. Some people are still not aware that consuming large amounts of fruit and fruit drinks is a quick way to pack  on the pounds, not to mention, can potentially lead to developing diabetes in the future. The trick to eating fruit for your betterment is to choose fruits that are low glycemic and have little affect on blood sugar. The best low glycemic fruits to consume are berries. I highly recommend staying away from watermelon and pineapple, because these are the two fruits that cause the biggest spike in blood sugar when consumed. Okay okay, back to these delicious healthy strawberry lemonade yogurt bars! The beauty of making these popsicles, is that you can switch up the recipe according to your preferred taste/sweetness liking/etc. If you prefer raspberries, blackberries, or blueberries  in addition or in place of the strawberries…have at it!!! The kids will enjoy helping you make these healthy popsicles…and will love eating them! Gather all ingredients, the popsicles holders, a bowl, blender, and a spoon. Add all ingredients (except the strawberries) into the bowl and mix well with a spoon until all ingredients are mixed well. Add the strawberries into the blender and blend just long enough to chop up the berries. DO NOT COMPLETELY PUREE, leave chunky. Pour the chopped berries into the bowl with the yogurt mixture. Mix well. Pour the healthy strawberry lemonade yogurt mixture into each individual popsicle space, leaving a tiny bit of unfilled space at the top. Secure the handles...

My favorite snack as a little girl was strawberries and cool whip. Lately, I have been quite obsessed with the combination of lite cool whip and greek yogurt, motivating me for this amazing creation! This is a perfect treat to make for a gathering/party and an even better treat to just keep in the fridge for a few days for the family to nibble on for a healthier dessert option. The only part of this dessert that is borderline unhealthy is the cookie crumble and this can be “halved” or omitted entirely from the recipe if you would like to be extra healthy and totally gluten free. Feel free too choose a gluten free shortbread cookie to use in replace of the Lorna Doone’s if you would like to make this recipe gluten free. First, clean and trim the strawberries and raspberries. I used just these two, but feel free to mix in blackberries/blueberries if you so desire. Set aside in a bowl or baggie. In a large bowl, blend the cheesecake layer ingredients together with a hand mixer. Make sure to scrape the sides to ensure everything is well blended to a creamy texture. Gather the trifle bowl, lite/fat free cool whip, berries, cheesecake filling, and Lorna Doone cookies. If you do not own a Trifle Bowl, CLICK HERE! Crunch up one bag of the Lorna Doone Cookies in the bottom of the bowl and spread evenly. I usually sprinkle a thin layer of graham cracker crumbs on the bottom as well, making it easier to spread the next layer. I then spread 1/3 of the cheesecake filling over crumbs, making sure you spread evenly....

I told you that I was on a healthy popsicle mission…so here we go with yet another yummy creation! Again, super easy to make and minimal time required! Gather all ingredients. Pour all ingredients into a large bowl and mix well with a large mixing spoon. Take a fork or spoon and “mash” at least half of the blueberries in the mixture. Carefully pour or scoop into individual popsicle slots in container. Leave at least 1/4 inch of space without mixture in order to prevent overflow! Run the container under hot running water for about 10-20 seconds in order to pull handle out of the container. ENJOY a guilt free snack!!!!!...
